yeah its like dry aging a steak. you just cut off the rotten parts and what remains tastes more concentrated. british food is grim. also it appears to be winter since there is snow on the ground. shouldnt really be any flies.

a couple things regarding the pheasant the show doesnt make clear or leaves out: 1. Blackthorne is so busy training the regiment and learning Japanese that he simply forgets about the pheasant and likely, as Morgan points out, is used to the smell so it doesn't bother him. Fuji does remind him, but he might just be distracted and he does say that he doesn't understand what she is saying. 2. Uejiro is given a swift and honorable death by a samurai, which the alternative is him dying of old age/sickness and living on in pain in the meantime. He gains honor and purpose in death by restoring harmony to the village

Toranaga had nothing to do with the gardener. There was a town meeting and the village headman determined it was a house problem so the house (i.e. Fuji) should solve it. The gardener volunteered to steal and bury the pheasant, knowing he would be executed for disobeying Blackburn's orders.

Dry aging pheasant is still definitely a real thing but to leave it out for a full week exposed to the elements is insane. You're supposed to leave it in a cool, dry place, like a cellar. These days you would refrigerate it too. I have no fucking clue if the English actually were so dumb as to eat game that was rotten from flies for a week at this time, but I really hope that part of this is just Blackthorn's personal lack of awareness due to being a pilot and out at sea eating god knows what for god knows how long.
