The achilles paradox makes sense to me. The turtle took his time and conserved his energy and then achilles had to sprint 500 metres and the turtle had that much space under his belt before he even had to start running.

For the Potato Paradox, it's not a paradox but a framing of how you see the situation. Look at the 100 lbs of potatoes as a mixture of potato matter and water. The question is about water content of the whole mixture by weight. So a 100 lb mix w/ 99% water means that you have 99 lb water and a constant 1 lb potato matter. So to have a new mix with 98% water content this means the whole mix weighs 50 lb so that 98% of that mix is water. This corresponds to a 50.5% reduction in water found in the mixture. One helpful way to look at it is to ask, what does it mean to have a 50% water content? This means that half of the weight is from water and half from potato mass. This would mean a total weight of just 2 lbs (1 lb potato mass + 1 lb water). This corresponds to a 97.98% reduction in water found in the mixture. Another helpful way to look at it. What is the weight if you, instead of reducing the water content to 98%, reduce the total water by 98% of its original amount. Then you have 98% of the original 99 lb. This yields 97.02 lb water and 1 lb potato matter. This corresponds to a water content of 98.9798% (a very minor reduction for the whole mix).
