It’s actually better for vendors to be regulated because then potential customers know that the food stand has been approved by the sanitation department so they can now trust the product meaning they are more likely to buy. However I do believe it shouldn’t be a difficult or expensive process especially because the margins on a business like that are likely extremely slim. It should be as easy as calling up the health department and setting up an appointment for an agent to come out and inspect your set up. Perhaps with periodic safety checks. Any fees should be levied on the taxpayer
