To help with some of the confusion that is not spoiler since this is just general D&D info... Chromatic dragons are as others have said the evil ones. They do not generally work together because they are already so egotistical and untrustworthy that they would not consider sharing anything with another dragon. They'd fight over territory, etc. So what is unknown at this point is how/when this group came together, what their goal is and why they appear to follow Thordak (red dragon) so readily given what is commonly known about these types. This is custom world stuff by Matt so you won't find an explanation for this in non-Critical Role D&D lore. Some dragons (both good and bad varieties) can use magic to varying degrees (some do not) and can also polymorph themselves into other forms to move unnoticed through the world like Brimscythe did. This is not affecting their age, only time does that. The Chroma Conclave is just the five dragons, now four since the blue one is dead. It's the name they gave their unprecedented alliance.

A fun fact on D&D dragons that the show doesn't mention is that they get stronger as they age, which is why Vex sounded so scared when she said they looked ancient. Which puts all four of them at like 800+ years old. The four they had there were a red, white, black, and green dragon. Those being fire, ice, acid, and poison respectively. Oh also they're all "Chromatic Dragons" which are traditionally evil in D&D. There's also traditionally good dragons that are called "Metallic Dragons" like gold, silver, copper, etc! Oh and the green one who saw Keyleth in season 1 wasn't physically present. That eye was her looking through a magic stone, which is most likely how the other dragons communicated with Brimscythe. Also, as some small foreshadowing, if you go back and look at Brimscythe's study in season 1 he even had a rug depicting five dragons on it!
