Yeah like others have said they are just focusing on the cases with wesen. I would imagine they have normal cases sometimes in between off screen and we are just seeing these ones. there may be other wesen cases in between too just like buffy or supernatural had slaying or hunting happening between episodes.

Grimm is about fairytales & Grimms chase after wesen so as other people mentioned there will be wesen of some sort in every episode

Yep, what Steve Quast said. It takes a while to get going, bit like S1 of Buffy in that respect, but it picks up. There were a lot of Buffy and Angel fans who watched the show when it was airing, because of David Greenwalt's involvement & also Jim Kouf who was a writer on Angel.

Like some other shows Grimm takes a while to get going. If you stick with it, though, there's some great story coming. Fun fact, I initially got into the show because I came across it while I was flipping channels and the actress who played Juliette reminded me a lot of Anna from Supernatural, at least at first. I could tell it wasn't her, but I ended up watching some episodes because of that and I got hooked pretty quick. I came in somewhere in the middle of the first season.

The majority of Grimm episodes have some tie in to the actual Grimm's fairytales.

Being a supernatural show they focus mainly on the cases involving Wesen, plus Wesen being more animal like are likely more prone to violent behavior and therefore probably responsible for more crime. I also get the impression there are a lot of Wesen in the city where this takes place. I mean even the refrigerator repair man was a Wesen.
