During World War II, the United States ordered 120,000 people of Japanese ancestry to be moved into relocation camps. George Takei, who provides the voice of the warden, spent several years as a child in relocation camps in Arkansas and California. Yes, metal come from the Earth. Steel from Iron ore, Aluminum from Bauxite, etc. Better it the prison has been made of wood. Still has minerals in it, but more fibers than mineral.

The reason why Aang didn't stay to learn earthbending, aside from wanting to go to the North Pole so Katara can find a teacher as well, is that the Avatar typically studies the elements in a particular order. That order is the same as the one spoken in the intro "Water - Earth - Fire - Air" and it is also the order in which the cycle of rebirth works with the different nations - there is actually more to that order but any further explanation is going to get into spoiler territory...
