Ren is also mad because this is the THIRD time in his life when a place he wanted to protect is going to be destroyed. His father always preached to take action. And he feels he is failing his father as well as everyone he has lost in both Kuroyuri and Beacon.

Also, there is a pretty clear parallel between Hazel and Harriet. Both of them lost people they cared about on some level (we don't know how close she and Clover were but she was shown to be angry after seeing his corpse) and both of them lash out at the easiest people.

The cold thing was actually mentioned last Volume and came up indirectly after Watts shut off the heating grid because it wasn't mentioned that people with activated Aura could survive the cold.
As for Ren knowing about Jaune cheating himself into Beacon, we never saw others finding it out and it for sure would have been an interesting moment to see. But to me it makes sense that he told everyone during their travels.
