It's because while there was a attraction between them from the start it took a while for them to kiss. Then there was nothing for a bit. They had sex/were together for a little while then they were pulled apart (the sleeping thing to find a cure for the werewolf bites?) and then he gets compelled and then she dies. So it is canon but.. they.. they didn't get to be together all that much =(
