Psycho is a classic and I also particularly love The Birds, it’s a great one (although I know you really don’t like birds, so maybe too much? if you want to get scared, though…). My favorite Hitchcock movie is Rear Window, but it’s not an horror movie, more a thriller with a touch of comedy.
