Tasty Tuesday - Valentine's Day recipe!

This recipe is from my Healthy Holidays Cookbook. Arguably the most fun book of all to create! I found tiny little flower-like pasta for this recipe that was perfect for V-day. I often find some of the best pastas at unexpected places! Either the farmer's market or sometimes I've scored at Tj Maxx/Ross, I can't remember which one carries all the random food items in the back...

This is a good idea! First of all thankfully I think beets are delicious so the idea pf roasting beets and saving the juice it AWESOME, second of all you just reminded me I have about 100g of freeze dried chopped beets (bought those when I tried experimenting with DIY veggie based Dry Mix as alternatives for pellets for my African Grey Chako, didn’t go too well so I ditched the freeze dried veggie mix idea and just converted him to an DIY fresh wholesome chop and the SFS, if you have any ideas of how to use freeze dried veggies for things let me know, they are just sitting in my cabinet), I bet brewing those like tea or powdering them with a coffee/grain grinder should be easy peasy!

You can use beet powder if you don't want to cook beets or the juice from the summer seasonal feeding chop. Beets are delicious roasted and served chilled on a salad with vinaigrette and goat cheese. A lot of beet juice seeps out when you roast beets.

I bet you can used the remaining juice in human recipes (maybe some of you have children that will love princesses pasta) or even for longer periods of storage in the fridge (you could used the ice cube method to pre portion the food coloring juice)
