Yeah, Katara definitely saw her mom's body. That's how I've always taken it at least. And I don't think that firebender had other weapons on him besides his bending, so Katara's mom was probably burned alive.

She doesn’t hold back and her emotions take over as seen by saying sokka didn’t love his mom or her bloodbending that guy. Though it isn’t really confirmed , guessing the reason Katara didn’t ask any questions is because she actually saw her dead mother in the tent seeing how he didn’t take her prisoner and how Katara always says her mother was killed, so you can only guess she saw her body and that traumatized her for the rest of her life.
