The way I think it's mean to be interpreted is if you look at the stone it's exactly how Bucciarati dies to the boss originally. He was meant to die there defending his values but since Mista broke the rock he caused fate to change. Remember here that Fugo originally is the one going to investigate Leaky Eye Luca's death but after the rock is destroyed Bucciarati says he'll do it instead. Because Mista changed fate it made it so that they met Giorno so at that very moment that Bruno dies in the cathedral, Giorno is now a factor at play and gave him enough life to keep going for a while longer which is in line with the new Rolling Stones prophecy. Bucciarati could have seen the stone and decided not to touch it and eventually die to the boss but Mista breaking it changed fate to have them encounter a descendant of the Joestars and a theme we've seen many times in the series are the Joestars inspiring people and giving their lives meaning like Giorno did here. It's like back in Part 3 when N'doul says the the evil needs an evil savior. The gang had given their lives to evil and the mafia but Giorno showed up and gave them purpose again .

One never understand this episode fully on first watch, so perhaps you’d wanna start your rewatch with this first Nothing’s ever confirmed of course, but this basically explains how Bucciarati was able to miraculously come back to life after he was for all intents and purposes died. Rolling Stones foresaw his fate already. Because of Bruno’s ideals, he was fated to challenge and die at the hands of the boss one way or another; which is exactly what happened. But since Mista managed to destroy the stone, Bruno’s fate was changed and his soul was given that small time extension so that he could finish his mission. It wasn’t Giorno who saved Bruno; it was Mista, ultimately. However, this change of fate also doomed the fates of Narancia and Abbachio, as shown when Rolling Stones turned into them too. Incidentally it explains how Mista somehow survived everything despite being the most shot up member of the crew. He didn’t appear in the stone so he wasn’t fated to die at all, despite their enemies best efforts. I really appreciated this tie back the upon rewatching Part 5 again; it truly deserves its theme of Fate.

I always wondered how Polnareff would react if he found out that Girono was DIO's son. If you still want a JoJo fix before Part 6 comes around, check out the 1993 Stardust crusaders OVA. Its not faithful to the manga and they changed a lot of things so the anime would be a different experience of what you've seen before. I find the english dub better in the OVA

So there's no clear interpretation of the rolling stones, but the idea I think is that if Buccelliti died there he would have never met Giorno and went after the boss, Buccelliti wouldn't have had to suffer as a zombie, and Narancia/Abbachio wouldn't have died.
