Wiley was in Pay As You Go he was a garage mc before grime existed. I’d say him + Dizzee are the godfathers of grime, they invented the eskibeat sound which quickly became grime (Wiley has a song called Wot U Call It which was about people not knowing what to call the genre) which evolved from garage, the best representation of this in terms of a body of work is Boy In Da Corner which is incredible but I’m not sure you’re ready for it yet with those early grime beats

That YouTube channel is the one I've watched it on, it's fine EP. 1-3, but as the music becomes more recent there are more and more audio cuts because of copyright. So if it can be found on a pirate streaming site it will be better.

I think you'd have to start listening to the music to get to know the differences, this docu series doesn't geek out on that aspect but it's good at giving a feel for the culture back then and how the genres evolve. Jungle with the fast breakbeats, Garage more related to house early on, but introduced crews and more MC focused later. I just realised they didn't mention one of the most commercial garage MC, Craig David (Drake's style inspiration.. probably).
