Anime Filler is they take a Canon concept and expand on it more so then what was done in the Manga. So basically that one episode you skipped in Thriller Bark, were you missed the fight between brook and Ryuma.

The reason for this is because while the stories themselves are NOT in the manga chapters, they do appear in One Piece as the Cover Stories during this past Arc and the next two. Eventually, the stories that you get told here get brought into the story so if you skip them it will leave you confused later on. Also, these are not the only episodes during this Saga that this happens. Im not sure what source you are using to determine whats filler/cannon, but you really should watch 418-421, 453-456 and 506-510. These are not like G8 :)
