That of course doesn't explain why spaceships in Star Wars have exposed bridges. My guess is the Star Wars universe runs largely on W.W.II levels of technology with a few "black box" technologies.

Just a quick answer to the "why put the bridge out where it's exposed?" question, at least in the old series the primary defense was the screens. Weapons were powerful enough that if the force fields went down, it wouldn't matter that much where in the ship the bridge was. Evidently being able to swap out the bridge module easily was considered worth the tiny increase in vulnerability. And then of course in the movies and Next Gen they made the weapons far weaker.

I will point out that the concept of a bridge, i.e. a place to "fly" your spaceship is quickly turning into a quaint idea. On sea going vessels of all sizes, you have autopilots guiding the ship. Your helmsman, master, or captain make sure everything is working and verify their position to make sure the autopilot is working correctly, but there's no "Sulu" steering the ship. With the advent of autonomous cargo ships becoming a thing, there's no human in control. And ports, like Amsterdam, are upgrading their procedures to handle these beasts, so no human need step on board and sail it. Heck, it was a plot point in Godzilla (2014) where the Watch the Whales boat had a GPS controlled navigation system! Now, do Navy vessels have autopilots? Probably, but only for cruising I'd gather. The Military is always a decade or so behind on things, as they want stuff that WORKS, not maybe works. But in the far future, say, the 24th century, do you need a Sulu and a Chekov to pilot your ship? Probably not. You tell the ship where to go and it goes.
