Do you have a source for any of the stuff about Iroh? I've watched and read a lot about this show and never heard anything like this before and can't find anything online about it. The closest I've found was that he was originally going to be a more stern and gruff mentor.

So fun fact, the original direction of the show had Iroh using Zuko to have the glory of capturing the Avatar for himself, and Zhao was meant to distract from this. Iroh would have betrayed Zuko, and kicked off a series of events that led to a number of substantial changes, including Zuko joining Aang earlier, and Zuko and Katara developing a romantic relationship with each other. Following that, Iroh was meant to be the final boss of the show, which is a part of the reason that they introduced him so early. They built him up as this strong character with a likeable persona, and his betrayal was meant to have a more emotional impact on the audience, to make his role as the final boss the more impactful. You can see some hints of this version of Iroh throughout the first season, where in the second season, his character was changed to be more Zuko-oriented. Following the first season, it was decided that they would go a different route with him, and that's where Azula came in. She was effectively used to take over the role that Iroh's betrayal would have led to, and the story evolved from there. Also, Sokka wasn't sexist simply for the sake of being sexist. He was a fifteen year old boy with a fourteen year old sister, living with a tribe where all of the men had been gone for years. He and Katara lost both of their parents, but where Katara could more openly lean on their grandmother for comfort and inspiration, he was left in a role where he had to "man up", without any male role models present. He and Katara both suffered, and his suffering expressed itself in the form of teenage angst, paranoia, and a drive to prove himself by defending the remainder of the tribe - all women and children - against any foreign threats. Even in the first episode, it was clear that there was a lot on his shoulders, even without the additional context that would come later, and even more simply put than that, that's really how teenage boys can be, when interacting with their sisters. It's not sexism, it's just immaturity.

Wait wait wait WTF, why on earth does the title sequence say Avatar "War of the Elements"? I have watched this show countless times and how have I just noticed that? On such a crucial episode too Wow also just had to edit this comment because right after noticing that it goes into a "previously on Avatar" which to veterans of the show would know that the actual episode that it first occurred on was S2 EP6 . Netflix what you doing?
