They are literally his individual projects. "-ju" seems to be the suffix for his daughters, and "-ji" is for his sons. Hence, the only canonically appropriate name for Sanji for those who genderbend him for whatever reason would be "Sanju".

Oda is very well known for his early foreshadowing, and this is a part of it. We've been using this knowledge to try to predict upcoming events for years, and there are more than a few community theories that are based on this framework.

As he moves through the New World, he's telling a new story, while also reflecting and retelling the first part of the series. For example: A princess is forced into a position where she has to literally fight for her kingdom, while serving under the tyrant Warlord who plays the role of hero to the people. The main arc follows immediately after a related arc that involves medicine as a primary focus. A rebellion is forming and is led by someone with a direct connection to the princess, and among the main crew of the tyrant, there's an art-based ability, an explosive ability, a weight manipulation ability, a spiny ability, someone who moves seamlessly through the ground, someone who fights with their snot, and an (apparent) young girl. Luffy's brother is introduced into the current story, and the marine presence is mildly antagonistic in the beginning, neutrally friendly at the climax, and openly and dangerously antagonistic at the end. Luffy showcases a new form, and the tyrant is defeated when Luffy punches them through bedrock and folds a city. Now, am I talking about Dressrosa, or am I talking about Alabasta? Notice the similarities and the differences - notably, that Alabasta was rescued before things came to a head, and Dressrosa was not. The reflection is darker and distorted, but the connections are there. Looking at the current arc, there is already aa few apparent, and very important reflections of an earlier arc: A fleet leader with a penchant for scientific advancement in the name of warfare takes a special interest in something important to Sanji in a food-centric arc, the crew is split apart as the past of one member forces them to leave the crew behind, even as two newcomers momentarily join the crew to help them, and a threat to Zeff's life holds some direct influence over Sanji's actions. After all, on paper, Judge shares quite a bit in common with Krieg, except Judge is actually successful in his pursuits. It's a dark, distorted mirror.

Still, you're generally correct. He's moving his arms so fast that it gives gives the illusion that he's multiplying his limbs. Kong Orgon is effectively the Gear 4 derivative of Gattling. In this case, however, I don't think it's that he's replicating Gear 2, it's more that he's taking advantage of his elasticity to rapidly bounce his arms out horizontally, while simultaneously punching as fast and as repeatedly as he can. It might look like he has six arms, but going by its effect, it would likely look more like solid walls of flesh that extend out from his body and forward, as he moves his arms and shoulders faster than the eye can see.
