Since Miss Merry Christmas did mention it was a new type of technology developed in the Grand Line, it's very obvious they spmehow used some kind of science to extract the essence of the fruit and infuse it into an object. But, since the exact process is too difficult for a layman to understand, they just refer to it as the object "eating" the fruit, to keep it simple. I don't think it's really something that requires a lot of suspension of disbelief, it's just another reminder that the technology in One Piece is much more advanced than one would expect at first glance.
