Not really much to answer that isn't already answered later, we're literally only one episode in excluding the prologue (which honestly, takes away from the shock of the exposition and is one of many reasons that I'm not a fan of the UBW adaptation).
On the comment about the grit and dialogue of Fate/Zero vs. UBW/HF, they're just different stories with different tones; don't expect UBW to change much in terms of that. HF is definitely grittier than UBW, but in a different way from Zero. There's some good dialogue in UBW, but it doesn't scratch the same itch as Zero's dialectic style, if that's what appealed to you guys. The biggest reason for this is probably the difference between the writing styles of the source material. Urobuchi, who wrote Fate/Zero, is known for more philosophical narratives using his characters as ideological devices, while Nasu, who wrote stay night, is more stylistic and descriptive (if my experiences with the VN and his FGO works are anything to go by).
Edit: realized this might’ve sounded like i’m hating on UBW. i’m really not, it’s a fun watch, just i have problems with how ufotable adapted it (which is honestly bound to happen for any VN adaptation just given the nature of the two mediums). i love Nasu’s writing too (for the most part), and he does GOAT-level work when it comes to fleshing out the ideals of his characters, didn’t mean to imply otherwise.
