The series being remastered you mentioned at the start is the sequel to Stay Night, made around the same time as Zero. You watched the openings for the visual novel but there’s no anime adaptation yet. If you are serious about getting into the original visual novel, then it is worth checking out afterwards. Many consider it one of the best Fate stories ever, even superior to Zero.

So I guess the author of Zero tried to add some different aspects of Saber? And in the Fate stay night, The identity of Saber is supposed to be a surprise.So she feels a bit more mysterious.
