The pizza joint is Uncle Cattani's long running small business!
As Jackie moves out to Knoxford for her enrollment into K.O.U. , her mother encouraged her to go work part-time at her "uncle's" place, in order to make money on the side and get work experience.
As for Derrick, Derrick just happens to have worked for Cattani for some time, a man of few words, yet super reliable and humble all around guy.
