Eeevee more like game engine. It use baked lights, reflection maps and so on. Cycles use real "world" setting like same where we live.
To get same render in the eevee is harder than in cycles. And if compare two renders cycles is better but eevee is faster. So, for preview animations eevee is good

You mentioned on Tumblr that you were using eevee to render this gem. I recently went back to blender (your awesome work inspired me to pick it back up in the middle of my apprenticeship!) and I'm curious, what is the biggest difference between cycles and eevee? Why would somebody use one instead of the other?
