Watching you kneading the dough... kinda reminds me of how the "Grannies" bring together dough for pasta. (Channel on You Tube is called "Pasta Grannies"). This cake dough has leavening and butter in it.... but the concept seems similar. More flour than liquid brought together with kneading thing. The butter fat would break up the gluten where in pasta it is only eggs to activate the gluten. As for flavor.... I don't recall any salt ???? I may have missed that. And did they use spices as liberally back then? It may have been enough ginger and nutmeg for their tastes at that time. Good luck messing with the recipe.

This was fantastic! I was wondering how a 4lb cake could cook in 15 minutes, but then you rolled it out. These look good! The ginger overpowered the nutmeg though sounds like, so maybe a whole nutmeg is to be used?
