He finally built something he wanted to keep, had something he really cared for, and people who cared for him. Then he lost it all except Beth, and he feels like it's partially his fault. You are definitely right that she clearly feels safe with him since he has never hurt her or let her get hurt. Even in his outburst, he never hit her. But you are even more right that he feels safe with her; he can express his feelings around her, and he learned that after Zach died. I think it's so important that he mentioned Rick first when mentioning the people they'd never see again. He had Merle, then he had Rick, then he had Carol. He recently lost two of the three people he connected with the most, and now Rick is gone too. I already talked about Beth and how much I love her endless optimism in a previous episode, but I really do love her perspective. Also love the use of The Mountain Goats song at the end, honestly a really good band to represent the both of them with their folksy vibe (Beth) and the topics of struggle, alcoholism, drug abuse, and self-destruction they typically cover in their music (Daryl). 'Up to the Wolves' in particular is about moving past abuse (my interpretation), which is what I believe burning down the moonshine house partially signifies for Daryl.
