It's not that Emma and them believe that they would have escape without Norman's plan, but it's the fact that Norman believes that his shipment was 100% needed for the escape plan to work. Emma and them believe that the plan would have happened with/without Norman getting shipped. However, I do agree that Emma isn't processing the whole situation but they are children who think in simple terms at the end of the day. Emma and Norman conversation in this ep break down the issue with certainty and uncertainty and their thought processes.
