Maple's defence stat is so high, the Hydra can't damage her at all. Her defence is so high (very high VITality stat), she takes no damage from physical attacks. Poison is considered as a debuff, so it affects her. Having said that, her high VIT reduces the damage inflicted. And her being able to eat the Hydra was because she acquired poison immunity. So no problem eating poisonous stuff (something that would kill any normal player).
