The events we saw did not take place at the same time as Subaru's confession to Emilia, it took place well before that. We know this because the reason why Ram received a blank letter was due to the letter being written by Rem and subsequently wiped when she lost her name. And you're right, RBD is not his power, it's a curse. It literally forces him to relive death over and over again for some purpose that is not his. He just happens to piggyback off of it to influence some other things.
