For exactly how Jotaro beats Dio I always thought about it like this. Jotaro had just broken Dio's legs and Dio still chose to attack with a kick cause that's how cocky he is. However now you have Star Platinum, a stand that can break diamonds hitting you with a full power punch in an area that's already been weakened beforehand. Now I'm not an expert but I'm pretty sure the ensuing shockwave from that punch going through Dio's body would probably make him explode lol

They are using their stands as springs to shoot around, it was much more fluid in the manga, the anime has to just have them kinda float there during long dialogue moments lol
