Not only would burning the basilisk create a huge plume of smoke that would likely be seen from the village, but with the creature being so poisonous (poison breath, paralyzing claws) the smoke from its bonfire could likewise be toxic. Also, like the creatures of Wano, the meat of the chimera might have been poisonous, which would have made Aziz's "gift" backfire in the worst way. Still he could have done more to disguise the cause of death, like leaving a number of cuts in its body at varying depths. That way the knights would be looking for a group of people rather than a single, and perhaps dangerously powerful, individual.
