This is correct! From what I can see all of the animal pirates (Kaido & Tobbi-Ropo) do refer to Yamato as a man. (Son & Bouchan 「坊ちゃん」"Young master" which is used for males as well) Luffy's side which obviously lack context use genderless nouns & pronouns, but that doesn't really work well in English without sounding weird or rude. (Eg: That one is strong! / That person over there!) All instances of Momonuske, Ace etc using "he/him" are completely a translation choice. Then there's Luffy who very in character does not care too much and just nicknamed Yamato as "Yamaou" lol

Kaido's Fruit is named; Mythical Uo Uo no Mi. Model: Seiryu or the Mythical Fish-Fish fruit. Model: Azure Dragon. This is based on a legend of a Koi scaling a Waterfall and reaching the Heavens Gate, then when through with this ordeal transforms into a Dragon. This is also why Magikarp evolvs to Gyrados in Pokemon! Also it perfectly fits with Wano given that the entrance to Wano is a Waterfall where Koi climbs upstream and scales a waterfall!

In most cases of where Yamato is refereed to as a "He" in the sub, the more correct translation would be "This person" or "that person". Like in 1113 Ace says "This person is strong", thou it is translated as "he is strong!" Only instances I can remember when someone else is referring to Yamato as a boy, is Kaido saying his son is missing, and Yamato referring to him/herself!

So the name of Kaido's fruit wasn't mentioned in the main story, but it was revealed shortly after in one of the SBS. Oda tends to do this where he doesn't include information in the story simply because he forgets what he has and hasn't revealed. Another example of this is Kid's devil fruit, the magnet-magnet fruit, nothing extremely important. As others already mentioned before, Kaido's Azure Dragon fruit is based on the myth of the carp that jumps to the top of a waterfall and gets turned into a dragon, or magikarp/gyarados.

That’s kinda the crux of the whole topic with Yamato, the character uses masculine pronouns, but it’s not like women can’t do that in Japan, it just doesn’t translate as fluidly in English. Plus the characters obsession with becoming oden make it seem less like a character like Kiku if you know what I mean

the official name of Kaido's fruit hasn't been name drop in the anime yet as of what you reacted, if its been drop at all yet. Just that we know its Fish-Fish variant per Big mom in the episode you watched. Soo it could be Fish-fish Model Eel or something like you said. I just find it funny that we thought he was this mighty dragon this whole time but he is just a type of fish zoan in the end. Please no one confirm or deconfirm what i said for spoiler reasons. Unless the actual fruit name was drop and i missed it in this episode cause all i saw was Big Mom saying she gave him a mythical Fish-Fish fruit thats all, she doesn't name drop the mythical fruit variant name. From what I understand Ace used a Japanese pronoun that pretty much meant they so he said they are strong and not he is strong. The translation made it say he. I might be wrong but that is what people said when this episode dropped.

I really wouldn’t think much about the Yamato gender thing. It’s clearly a woman, but uses more traditionally male pronouns, so either one ultimately works
