Colcannon potates recipe for Samhain

Alastor cooks this dish for Samhain. A traditional Celtic dish from Ireland, it's easy and delicious, and might even become a favorite side dish to some!

5 golden potatoes, peeled and cut into cubes
Butter for frying, about 6 Tbsp
1/2 leek, sliced thin
2 scallions, sliced thin
3 cloves of minced garlic
2 cups of shredded cabbage or lettuce
1 cup of milk or half and half
Ground pepper to taste
Salt to taste
Crumbled cooked  bacon (optional)

1. Add the potatoes to a large pot with cold water and bring to a boil. Boil the potatoes until they're fork-tender, about 20 minutes.

2. As the potatoes are cooking, add the butter to a frying pan and melt on medium heat. Allow the butter to foam slightly before adding the prepared leek, scallions, and cabbage or lettuce.

3. Sauté the vegetables until they're soft and translucent; add the garlic and continue cooking for about one minute. Turn of the heat and set aside.

4. Drain the potatoes and return them to their hot pot. Begin mashing the potatoes with a masher; add the milk and continue mashing.

5.Once the potatoes are fluffy, gently stir in the sautéed vegetables, pepper, and salt.

6. Top with crumbled bacon, if using.

Serves 4

If serving with lamb chops:

Prepare the lamb as desired, either by pan frying or oven roasting. Pan frying creates a mess, but gives the meat a beautiful caramelized finish. Oven baking at 375 f is slower, but the meat cooks more consistently throughout.

I actually grew up eating these! We often make them as a component to other dishes like bangers and mash or if you had some left over they were easily used in shepherds pie! or we'd eat them just a delicious side dish of course.
