Barmbrack Bread recipe

This is a traditional bread Listener made for the Samhain night with Alastor. The bread is not only filled with dried fruits, but it also contains surprises that are said to foretell the future. Most traditional are the ring for marriage, coin for good fortune, and the cloth indicating hard times.

Zest of 1 large lemon
Zest of 1 large orange
3/4 cup raisins
3/4 cup sultanas (golden raisins)
1 cup brown sugar, packed
2 cups hot black tea

Combine all the ingredients in a bowl. Cover and let rest overnight.

3 cups flour
2 tsp baking powder
1 tsp of total of mixed spices (cinnamon, cloves, allspice, and ginger)
1/2 cup dried apples
2 eggs, beaten

Optional: a ring, a coin, and a small square of cloth, each wrapped in parchment paper. You may also chose other treasures.

1. Preheat oven to 325f.

2. Mix the flour, baking powder, and spices thoroughly in a large bowl.

3. To this, add the beaten eggs, dried apples, and tea-soaked fruits and its soaking liquid. Fold it all together until it's well-mixed, scraping the bottom of the bowl to get all the dry parts.

4. Add your wrapped trinkets, if using.

5. Line a pan with parchment paper; pour in the batter, making sure none of it touches the glass (it will stick otherwise).

6. Bake for 90 minutes, until the center is golden and puffy (a toothpick should come out dry when inserted into it).

7. Take the bread out of the oven, and let it cool for about tweny minutes on the counter;  remove it from the pan and paper. Continue cooling the bread on a serving platter.

8. Slice, and serve with butter. Eat carefully if the trinkets were baked in the bread.
