Or something that could be interesting is changing the design from the traditional bull+human to another composition from fantasy species like bull+orc, elf, dwarf, tiefling, vampire etc. Other than that I can recommend highland games or strongman competitions as inspirations for poses. Hope it helps^^

A minotaur druid making vines and roots erupt from the earth and directing them entangle foes (obviously not minotaurs) with a ferocious gesture. (Note: I like to imagine wielding various magics puts as much strain on somatic gestures as lifting weights does, especially the stronger the spell or stronger the resistance.) A minotaur paladin propping someone up (another minotaur) and pressing a hand to them to heal, with a reassuring sort of sentiment.
