Just to let you know, Rhaenys actually had white hair in the original story("The Princess and the Queen") and then GRRM retconned Rhaenys to having black hair in "Fire and Blood" to reflect her Baratheon heritage instead of her Targaryen heritage. They mostly chose the original version to make Rhaenys more easily identifiable as a Targaryen

While it doesn't really change anything as the books also heavily imply that Harwin Strong is the father of Jace, Luke, and Joffrey, given the importance of hair color in the show it's interesting that they decided to change it. Maybe the goal was to make it even more obvious that Laenor is not the father. Thought I'd mention it since you guys mentioned the bit about how targaryens without white hair didn't come until later.
