Just back from the stream, so just a quick FYI about a common misconception that you mentioned:
On Youtube, Gintama reactions actually have higher viewership than One Piece and some other popular shows ! I was also surprised to see that, but you can check out "Spherical Films" 's videos from last year.(he is not that active on his main channel now) Last year he started reacting to One piece and Gintama, along with shows like Monogatari, Sangatsu and Noragami around same time but on average Gintama episodes had the highest viewership among them. Exept some arc finales of One piece almost every single Gintama episode had higher viewership than one piece and mostly even twice the viewership of One piece. Even "Kimchi and tofu"'s Gintama reaction had viewership ranging from 99k to minimum 30k, even considering they had higher subscription base and compare their Gintama and JOJO reaction viewership which they watched around same time, Gintama still had higher viewship than their JOJO reactions on average.
So below are my guess on why Gintama reactions have higher views than one piece and others on average on Youtube but there is still this misconception:
1) There are not many reactors reacting to Gintama so there is a not balanced demand and supply which makes any decent reaction makes it have higher viewership on Youtube.
2) One piece is almost 1 chapter :1 episode adapted to not catch up to manga while normal animes are 2 chapter adapted to 1 episode so its a lot dragged out (there is a "one pace" version of one piece that edits One piece in normal anime pacing by cutting unnecessary drag out scenes). So, for one piece, mostly just some season finales or certain hype episodes have higher viewership out of many normal episodes.
Meanwhile, earlier Gintama being seemingly episodic makes it perfect for higher viewership ( BUT ITS NOT episodic! you will not realized why those seemingly episodic early half of Gintama is necessary until you reach later episodes). So this format of Gintama makes almost every episode to get high views. ( Except ep1 and 2 as they are adapt congrat eps not even filler, so don't watch them)
3) also, Gintama is 365 episode not as Carson said "more than Naruto" :) also, you can watch earlier episodes on your own before reacting to it if you want, since its a show gets better and better so that might save some editing time and getting straight to relatively higher viewership or easier going through earlier Gintama that some consider relatively slow while some enjoy it from very beginning\ .
So anyway, Gintama reactions gets high viewership than One Piece reactions on average :))
