As a Sanji fan, I always thought it was quite interesting how similar Sanji is to Luffy (having both their father figures lose a limb for them & the belief in something intangible). I quite like the idea that, while Zoro embodies the Pirate King part of Luffy's dream, that requires strength & ambition, Sanji embodies the other part, that requires a different type of strength – continuing to believe in something ethereal, despite many people challenging your dream telling you to give it up.
