The animators even decided to prolong the fight, which might have slightly reduced the intensity, but it actually emphasized Luffy's incredible resilience. You know, rubber always bounces back, and so does he. Regarding Krieg's bullets managing to hurt Luffy, as Lindsay pointed out, those bullets had incredibly sharp tips. Luffy isn't impervious to cutting; it's just that in the One Piece world, bullets happen to be conveniently round for Luffy's benefit, haha.

Even Mihawk recognized that luffy was a "Wild card", which from his point of view is one of the most dangerous obstacles amongst the sea's. This kind of stuff doesn't bother me though, i love them hyping up the MC in that way and giving him such significance in the story. Same deal with how Zeff admires his determination and willingness to laugh in the face of death. You didn't really get that in the live action as much.
