"Ga de don" is a phonetic spelling of a common saying meaning, "lookit that!"
From what I can glean, it's probably the remains of a fairly archaic French expression - "Regarde donc!" (sort of "Look thus!") - after having been given the Cajun treatment.
Cajun French. There's not much about it that's standardized, not even spellings in many cases. It's like trying to do a forensic dissection of an over-boiled, spicy, mysterious word gumbo.
