I believe Big Mom took it because after whitebeard died, Fishman island was under Whitebeards territory and then the Big Mom pirates took over the island. Brook did get 3 copies of the poneglyphs in her library but it wasn't mentioned that she had two red ones already. So far there is one in Wano, Zou, and Big moms but I think we have 2 out of 4 Red poneglyphs.

The adaption is great! They aren't skipping anything so unfortunately, we didn't even get to see Roger anywhere near Big Mom in the manga either to get the red poneglyph :(

I believe it's the first time we find out Buggy and Shanks were on the same crew, you see that conversation about the poles. Here's the title of a video on YouTube of that scene "shanks fight with buggy (one piece)."
