Lots about things like trades and taxes and inflation and different currencies and things of that nature. I head this remake will cover alot of things from the novel and such that the original anime didnt cover which im excited to see. Already quite a few differences between this remake and the original anime just in the first episode.

Holo is described as appearing as a young teenage girl, something like 14 if I recall, but I don't think the story ever mentions a specific age for Holo, but she was that village's god of the harvest for long enough to be forgotten and turned into nothing more than a superstition.
