If you remember back when we saw the one dragon child that had grown up, they said that dragons choose when and how to grow according to what they want to become. That dragon wanted to be large enough for Chise to ride. This dragon wanted to escape/destroy all that had hurt him. Back in episode 3 we are also told that aggressive dragons have been bred out of the gene pool, which we can assume is from having Lindel present keeping them safe and away from danger that could influence them enough. Seeing this one be snatched and the result shifting it into such a dangerous creature portrays just how essential Lindel's job is.
