Geese whole deal is basically being the scout/non combat rogue/handyman of the team. He is woefully inadequate in combat to be in a S-rank party like the Fangs of the Black Wolf. In exchange he basically does everything else on the logistic and intelligence side of things, searching for information, scouting for traps and stuff, negotiating with people, mediating between party members, cooking etc. it's all on him and he does a damn good job at it. As for Roxy surviving for a month, as Rudeus and Eris learned on the Demon Continent while not especially tasty and gross to look at, monster meat is edible and Roxy is from the Demon Continent.
