They are using handheld mics, so the imagery you are hearing is produced in mixing, probably using a surround plug in. They do mix in some ambient mic from the studio. But it's kind of a gimmick. However, those performances have much less vocal tuning than other live performances, like It's Live. Also, these performances use alternate vocal melodies and ad libs that I've not heard in other performances. So even though the "360" thing is a little contrived, there are other things to make these very special.
