Ryuzu sacrificed herself, something happened with Roswaal and Hector, and idk what exactly transpired leading up to Beatrice ending up in the library. But I'm guessing she was jealous and heartbroken at the same time, because even if it's not real, Emilia got to spend time with people she considers family. And maybe also something along the lines of, Emilia is such a pure and innocent and wholesome person, who looks just like the witch who consumed Echidna, which probably stirs up all kinds of emotions in her. Although it could be she wants what she has, because she's the Witch of Greed. Those are my guesses. I'm getting a strong vibe that Echidna has many layers to her character, and I feel like she's more complex than just the greed that she represents.
