Even on regular tv shows, not just anime; it's covered by a mosaic. For anime, it will be made sparkly or rainbows so that it can still be shown. Puke is usually used in comedic situations so the sparkles/rainbows have an added funny effect. If there's a serious moment where a character will puke, directors of anime, tv dramas and such will work around that by showing them maybe from behind over a toilet. But never the puke!
