Subaru doesn't die right away if he starts telling people about Return by Death. Time slows down and he basically gets a warning to shut up. If he keeps trying to talk about it, then it'll kill him or the people around him (which is why he covered Tanya's ears to be safe). When Subaru said "I came back," he just meant that he survived the experience.
