Some things about the second episode here, Chitanda wanted to know why she was angry and wanted to understand why the teacher made a mistake in order to justify why he was upset, because she feels the need to assume the best in people and doesn't want to get angry with them, even if she's in the right. Oreki realizes this but squashes the thought, because he thinks it'd be arrogant and a pride of sin to assume he could understand her, when it could just mean he lacks confidence in his ability to understand her. (He calls his deduction skill "luck" after all) In accordance to what Chitanda said. He idealizes Chitanda and doesn't think too highly of himself. Yes the letters are cookies, Chi tried to break up the two fighting in the beginning with said cookies.

Yes Mayaka got stood up by Satoshi. (And Ruined a good set of clothes.) Notice throughout the entire episode Oreki is very attentive to Chitanda's mood, he didn't try to break up the fight until he saw how much it bothered Chi, and is the only one to notice Satoshi and Mayaka's teasing was bothering her. Oreki also in the last episode was very irritated and frustrated when no one else but him realized what Hyouka meant, he was pumping his leg which if you notice is a quirk/tell when he is irritated or frustrated about something.

Mayaka's layouts are because she is in the Manga Club and has an interest in Manga. Also remember how Chitanda said that Oreki reminds her of her Uncle Jun, well that is a framing device so that we see that Oreki almost sees Jun as an Image of an idealized version of a person he wants to become, he secrets wants a rose colored life so at first he imagined the incident of Jun as a Heroic example of it. Also he didn't solve the mystery PURELY because he has a crush on Chitanda, or rather he is in love (And at the same time frustrated) with her because she represents the anti-thesis to his grey colored energy conversation philosophy, he wants what he lacks, basically for whatever reason he has no passion or desire and feels empty without it, and then this girl comes and lights a fire in his soul. "Hyouka" meaning "Ice Cream" and "I Scream" is a metaphor for a Rose Colored Life, basically if you take a chance to live life there is a risk you end up with pain, failure, and regret, but that might be better than simply staying in your safe comfort zone. Oreki was starting to idealize the idea of a Rose Colored Life, but here he gets a sombering reminder of what's at stake if he takes that leap of faith. For the record there are more mysteries coming up that aren't just one offs, and arcs, as well as one off sprinkled inbetween. Trust me you won't be disappointed now that the first mystery is over! Also before you wanted episode 12 after episode 11 please watch the OVA 11.5 it takes place inbetween and is more or less canon and it'll help with transitioning between the two cours in a way I can't tell you because that's a spoiler. Not sure where your watching this but the OVA isn't on Crunchyroll however.
