It's not "luck", Assassin is still there because he is anchored to the temple like he said, which is a leyline. It provides spirits like him power to linger on, but obviously not forever without a master. Since he is supported by the leyline, his case is more "normal" vs caster surviving for some time without a master after stabbing herself with rule breaker or archer who has remained without a master for just as long despite using mana to fight Shirou afterwards including casting UBW. Speaking of anchoring servants, the other archer/gilgamesh is anchored to this world with the help of the grail's contents from 10 yrs ago, but also via the mana of the survivors of 10 yrs ago. Yes, this was something revealed in Fate route that was never really adapted. You remember those kids in the hospital when Kiritsugu went to pick up and adopt Shirou? Those kids were also survivors of the incident similar to Shirou. Instead of getting adopted by Kiritsugu, they were taken care of by Kirei, as a sort of an orphanage church thing. Obviously, Kirei being Kirei, that's not what actually happens. Those kids are barely kept alive in a mummified state in the basement of the church as their mana slowly getting sucked out to sustain Gilgamesh for the past 10 yrs. It's some really dark tidbit that anime watchers don't get to see.
