Yeah, we know he is super strong and all, but since he trained out in the wilderness and no one to compare to, he keeps on thinking he's weak (even though now he can parry 1000 sticks).

It's a lot clearer in the novels, but he's got some kind of mental handicap, plus he's spent his whole life being told he has no skill and he's the weakest of adventurers, so He knows that if he can fight it, it can't be a monster or demon, it must be a weak animal. The anime does it a little out of order, in the books he fights the minotaur, beats it, then decides it must have just been a cow, because he couldn't have killed a demon or monster.
