The reason you hear them say Chyoman is because in Korean they're saying his full name, Choi Hyoman (and the way Choi is actually pronounced in Korean vs. how an American would say it is pretty different) A lot of times in kdramas the English subtitles don't include honorifics and titles even when characters use them so when you hear them say a name and it sounds like there's extra words/sounds it's usually bc in Korean they have something extra there that doesn't make it to the translation. (sorry if this is unnecessary info, I just think the way subtitles work with languages so different from English is really interesting)
